Gin
A clear spirit from any base material, distilled neutral much like vodka until it is aromatized with botanicals. Juniper is the nucleus in the heart of all gin, but the supporting roles of other flavors can differ widely. With an endless combination of citrus, roots, flowers and herbs, it is a spirit of diversity. Gin is made for the cocktail, and the only spirit for a true martini.

Rum
It must come from sugar cane, therefore it is tropical by nature whether it is the Caribbean, South America, or elsewhere, rum has a real sense of place. Depending on the skill of the distillery and the amount of time in barrel there is a large range of quality and complexities, from a simple cocktail mixer to an aged spirit of incredible depth.

Tequila

Mezcal
Mezcal born from the slow to grow agave of Oaxaca and many other regions of Mexico, then cooked in the smoky fire pits that give it an unmistakable profile. Rustic by nature it may not have the nobility of its sub category of tequila, but it has grit and an uncompromising character that can create polarizing opinions. North American Whiskey
Corn and Rye blended with small amounts of wheat and malted barley is unique to North America, but it is transformed like all whiskey through the aging of oak. Scotch/Irish/Japanese Whisky
It can be malted and smoked with peat giving a fuller flavor, or it can be un-malted without peat smoke, creating a lighter style. The barrels have always been used before and are a neutral vessel for long aging; in turn whatever occupied the barrel before adds subtle nuances. The originator of whisky is Scotland and its six regions of production; along with Ireland they have developed notable differences in styles and characteristics. However they are no longer the only masters of the craft, many other challengers are vying for the crown.
